Would anyone point me to the right endpoint to get the resource types that can be attached to a fact sheet?
We have a requirement to modify the resource types for a specific fact sheet type and I cannot seem to find from there to retrieve / update them

I will. There is definitely a need to create document types and associate them with different fact sheet types. Some of the OOTB ones are not relevant and users have to always try to figure out which one to associate with.

You can manage the resource types using this endpoint:
https://[your-hostname].leanix.net/services/pathfinder/v1/models/factSheetResources
When adding new resource types, make sure to add a label for them in the language model:
https://[your-hostname].leanix.net/services/pathfinder/v1/models/languages/en
